Chocolate & Caramel Choc-Chip Bar

Everything you need for a super delicious snack – These tasty bars are made with caramel sauce, melted chocolate and a whole lot of choc drops.
Bite into each layer – decadent chocolate, home-made caramel, all on a choc-chip cookie base.

Method

Base

  1. Preheat oven to 180ºC (356ºF). Line a 9”x9” square baking pan with parchment paper, set aside.
  2. In a mixing bowl, combine flour and baking powder. Set aside.
  3. Using a hand mixer or a stand mixer fitted with the paddle attachment, beat together softened butter and rapadura until light and fluffy.
  4. Beat in eggs, one at a time. Add vanilla, mix well.
  5. Add chocolate chips and beat until chocolate chips are just blended through.
  6. Spread batter evenly into lined pan.
  7. Bake for 30-35 minutes or until a skewer inserted into the middle comes out clean.
  8. Remove and set aside to cool. Leave slice base in the pan.

Caramel Sauce

  1. Combine butter, rapadura and cream into a medium size pot over a medium heat.
  2. Stir mixture until butter completely melts. Increase heat to high and bring to a boil.
  3. Boil mixture for 1 minute, whilst stirring to avoid burning.
  4. Remove from heat and pour into a mixing bowl, add vanilla extract.
  5. Whip with beaters for 3 minutes until the sauce thickens.
  6. Pour desired amount of caramel over cooled slice base still in the pan. Spread out evenly.
  7. Set in refrigerator until completely set.

Chocolate Topping

  1. Melt chocolate and coconut oil together in a double boiler over a medium heat. Stirring occasionally.
  2. Once completely melted and smooth, pour over set caramel layer.
  3. Refrigerate until chocolate has hardened.
  4. Gently remove slice from pan and cut into bars or squares.
  5. Serve.
