NYE Celebration Cake
Add a little sparkle to your life this Christmas and New Year’s Eve with our chocolatey Celebration Cake!
It’s everything a celebration cake should be, with layers of chocolate sponge, fresh cream, chocolatey ganache and chocolate drops galore.
Add a few sparklers for a little theatrics and you’ll be bringing in the New Year in style!
Ingredients
Chocolate Cake
- 1/4 cup Organic Times Salted Butter (melted)
- 1/4 cup Organic Times Cocoa Powder
- 2 cups self-raising flour
- 2 cups Organic Times Organic Rapadura Sugar
- 1 cup milk
- 4 eggs
- 1 tsp instant coffee granules
- 1 tsp vanilla
Whipped Cream
- 3/4 cup thickened cream
Frosting
- 150 grams Organic Times Milk Chocolate Drops (melted)
- 80 grams Organic Times Salted Butter (cubed and softened to room temperature)
- 4-5 cups Organic Times Icing Sugar
- 1/4 cup Organic Times Cocoa Powder
- 3 tbsp milk
- 2 tbsp thickened cream
Coating
- 100 grams Organic Times Dark Chocolate Drops
- 100 grams Organic Times Milk Chocolate Drops
Method
Chocolate Cake
- Preheat oven to 180ºC (356ºC). Grease and line two 6" round cake tins with parchment paper. Set aside.
- Melt butter and set aside.
- Combine all cake ingredients into a large mixing bowl, including melted butter at the end.
- Using a hand mixer, beat the mixture for 3 minutes. Scraping down the sides occasionally.
- Divide the batter evenly between the two cake tins.
- Bake for 30-35 minutes or until a skewer inserted into the middle comes out clean.
- Cool in tins for 5 minutes.
- Remove and cool completely on a wire rack.
Whipped Cream Layer
- Pour cream into a medium sized mixing bowl and using a whisk or hand beater, whisk cream until thick and fluffy. Set aside.
Frosting
- In the bowl of a stand mixer add butter. Using the whisk attachment, whisk the butter for 30 seconds or until just soft.
- Gradually add icing sugar, 1 cup at a time.
- Add 1 tablespoon of almond milk after each addition of icing sugar until mixture is smooth and comes together.
- Add melted chocolate and cream, beat mixture for a further 1-2 minutes or until light and fluffy.
- Add more icing sugar or almond milk until desired consistency. Frosting should be thick and fluffy.
Assemble
- Trim the tops off of each cake to create an even flat surface on each.
- Spread the whipped cream over the top of the base layer cake.
- Place second cake on top of the base, slightly sandwiching the cream.
- Spread prepared frosting over the entire cake, to completely cover the base cake and the top cake.
- Combine both milk and dark chocolate drops in a small bowl.
- Before frosting sets, carefully press chocolate drops into the frosting to coat the cake.
- Refrigerate for 15 minutes to set.
- Serve and Enjoy!
